In 2003 my friend Colin Flahive and I opened a little cafe in a town called Dali in China, I suggested we call it Salvador's because it would make for a funny art joke. We opened on Halloween 2003. After being open for nearly a year in Dali we decided to try and open a second cafe in the nearby city of Kunming and our two good friends Josh Pollock and Okano Naoko joined forces with us to open a new, bigger Salvador's. Right around the time that our Kunming cafe was to open for business our landlord in Dali called and told us our building was going to be demolished, so we moved out and have been in Kunming ever since. Salvador's has been open for more than six years in Kunming now and is still going strong. We pride ourselves for using quality ingredients and having a good business ethic.
